Scotch Highland cattle were first imported to the United States from their native Scotland in the second half of the nineteenth century. The cows were brought to the states when western cattlemen wanted to improve their herds and use as oxen for clearing land of unwanted brush.
Highland cattle provide the opportunity to produce a premium quality beef. Unlike other breeds, Highlands are slow maturing, making the meat fine textured and succulent. They are a multi - purpose animal, producing meat, milk, and fiber.
